Start your mornings with this delicious camping recipe that will fuel everyone for a great day at campground. Making pancakes around the campfire is a must for any camping trip, but these blueberry and banana pancakes will add an extra kick to get your crew through the day.

- 1 c. flour
- 2 tbsp sugar
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 c. milk
- 1 egg
- 1 banana, sliced into ¼-inch pieces
- ½ c. blueberries
- coconut oil
Instructions
- To save time and space, make the pancake mix before you leave home.
- Combine the dry ingredients: flour, sugar, baking powder, and salt in a small bowl until thoroughly mixed and add to a zip-top bag or a sealed container.
- When you’re ready to make your pancakes, whisk together the egg and milk in a medium bowl with a fork.
- Add the dry ingredients to the wet ingredients and stir to combine. Be careful to mix until just combined and slightly lumpy.
- Over your fire on the grill grate, heat a cast-iron skillet.
- Wash the blueberries and set on a paper towel to dry and slice the banana.
- Add a tbsp of coconut oil and coat the bottom of the pan evenly.
- Layer the banana into the skillet and top with a 1/4 c. of the batter. You’ll want to sprinkle blueberries onto the top of the wet batter.
- Let the pancake cook until the batter is bubbly and flip. Cook until golden brown and remove from the skillet.
- Serve with maple syrup, peanut butter, honey, or just butter and fresh blueberries or banana slices.
